
Pâté Chinois
A beloved French-Canadian comfort dish layered with seasoned ground beef, creamed corn, and fluffy mashed potatoes. Simple to prepare and deeply satisfying, it makes for a perfect family dinner.

Instructions
- In a large pot of salted water, cook the potatoes until very tender, then drain. Coarsely crush them with a masher along with 30 ml of butter, then purée with an electric mixer, gradually adding 125 ml of milk until smooth. Season with salt and pepper and set aside.
- Preheat the oven to 190 °C with the rack in the middle position. In a large skillet, melt the remaining 30 ml of butter over medium heat and sauté the finely chopped onion until softened. Add the 450 g of minced beef and cook until browned throughout. Season with salt and pepper, then remove from the heat.
- Lightly press the meat mixture into the bottom of a 20 cm square baking dish. Spread the 500 ml of creamed corn evenly over the meat, then top with the mashed potatoes. Sprinkle with paprika and parsley.
- Bake for about 30 minutes, then switch to the broiler for a few minutes until the top is golden. Let the dish rest for 10 minutes before serving.
