Instructions
- Prepare the beef marinade by stirring together 5 ml soy sauce, 5 ml dry sherry, 2.5 ml cornstarch, and 0.5 ml black pepper in a medium bowl. Add the thinly sliced sirloin steak (450 g) and toss until evenly coated. Let stand for 10 minutes.
- Meanwhile, make the sauce by combining 30 ml oyster sauce, 5 ml dry sherry, 15 ml soy sauce, and 60 ml chicken stock in a small bowl. Stir well and set aside. In a separate small bowl, dissolve 5 ml cornstarch in 15 ml water to make a slurry.
- Bring a pot of water to a boil. Add the broccoli (450 g, cut into florets) and blanch until crisp-tender, about 2 minutes. Drain thoroughly and set aside.
- Heat a large wok or frying pan over high heat until a drop of water sizzles and evaporates on contact. Add 30 ml high-heat cooking oil and swirl to coat the surface. Spread the marinated beef in a single layer across the pan and let it fry undisturbed for 1 minute. Flip the slices, add the minced garlic (2 cloves), and fry for a further 30–60 seconds until the beef is no longer pink.
- Pour in the sauce and the cornstarch slurry. Stir constantly until the sauce comes to a boil and thickens, about 30 seconds. Add the blanched broccoli and toss everything together to coat. Serve immediately with steamed rice or on its own.
