
Chicken Congee
A soothing and comforting Chinese rice porridge gently simmered with tender marinated chicken, fresh ginger, and spring onions. Light yet satisfying, it makes a perfect warming meal any time of day.

Instructions
- In a bowl, combine the chicken with a pinch of salt, a pinch of white pepper, and 1 tsp of ginger cordial (ginger juice). Mix well and set aside to marinate while you prepare the rice.
- Rinse 120 ml (Β½ cup) of white rice in a pot or metal bowl a couple of times, then drain the water thoroughly.
- Add 2 litres (8 cups) of water to the pot with the rinsed rice and bring to a boil over high heat. Once boiling, reduce the heat to low and cook for 20β25 minutes, stirring every 8β10 minutes. If the porridge becomes too thick, add a little extra water to reach your preferred consistency.
- Add the marinated chicken to the porridge and continue cooking on low heat for a further 10 minutes until the chicken is cooked through.
- Stir in the spring onions, 1 tsp of sliced fresh ginger, a pinch of salt, and a pinch of white pepper. Stir for about 10 seconds, then ladle the congee into bowls. Optionally, garnish with 55 g (2 oz) of fresh coriander before serving.
