
General Tso's Chicken
A classic American-Chinese takeout favourite featuring crispy deep-fried chicken tossed in a rich, sweet, and slightly spicy sauce. Perfect served over steamed rice for a satisfying dinner.

Instructions
- To make the sauce, combine 480 ml of water, 30 ml soy sauce, 30 ml white vinegar, a splash of sherry cooking wine, 1 g white pepper, minced ginger, minced garlic, a chopped hot pepper, ketchup, hoisin sauce, and sugar in a bowl. Mix well and set aside.
- To marinate the chicken, place the chicken breast pieces in a bowl and add a pinch of salt, a pinch of white pepper, 2 egg whites, and 45 g of cornstarch. Toss to coat evenly and leave to marinate for a few minutes.
- Heat oil in a deep pan or fryer to 175Β°C. Deep-fry the chicken in batches for 3β4 minutes, or until golden brown and cooked through. Use tongs or a spoon to loosen the pieces so they don't stick together, then remove and set aside on a wire rack or paper towels.
- Pour the sauce into a hot wok and add the broccoli. Bring to a boil. In a small bowl, whisk together 30 g cornstarch and 60 ml water to make a slurry, then gradually stir it into the wok until the sauce reaches your desired thickness. Add the fried chicken and stir-fry for about 1 minute until everything is well coated. Serve immediately, garnished with chopped spring onions.
