
Sweet and Sour Pork

Instructions
- Crack the egg and separate the white from the yolk. Slice the pork tenderloin into strips. Prepare the marinade by combining a pinch of salt, 5g of starch, 10g of light soy sauce, and the egg white. Add the pork strips to the marinade and leave for 20 minutes. In a separate bowl, mix the remaining 5g of starch with a dash of water and 10g of vinegar to make a starchy sauce.
- Heat cooking oil in a wok to 190°C. Add the marinated pork strips and fry until golden brown. Remove the pork from the wok and set aside on a plate.
- Leave a small amount of oil in the wok. Add 30g of tomato purée and 1 tsp of sugar, stirring over the heat until the oil and sauce are fully combined. Add a dash of water and bring the sweet and sour sauce to a thorough simmer, then return the pork strips to the wok.
- Pour in the starchy sauce and stir-fry everything together until the pork is evenly coated and the sauce has thickened. Transfer to a serving plate and garnish with a little fresh coriander.
