
Lamb Tzatziki Burgers
Juicy lamb burgers packed with bulgur wheat and warm spices, topped with a cooling homemade mint tzatziki. Perfect for a weekend cookout or a satisfying weeknight dinner.

Instructions
- Tip 25g bulgur wheat into a pan, cover with water and bring to a boil. Cook for 10 minutes, then drain thoroughly in a sieve, pressing out any excess water.
- To make the tzatziki, grate the cucumber and squeeze out as much juice as possible, discarding the liquid. Mix the cucumber into 200g Greek yogurt along with 2 tablespoons of chopped mint and a pinch of salt. Set aside.
- Combine the drained bulgur with 500g lamb mince, 1 tsp cumin, 1 tsp coriander, 1 tsp paprika, and the finely chopped garlic clove. Season well and mix until evenly combined, then shape the mixture into 4 burgers.
- Brush each burger lightly with olive oil and fry in a hot pan or on a barbecue for about 5 minutes per side, until cooked all the way through.
- Toast the buns if desired, then assemble the burgers with a generous spoonful of tzatziki and your choice of toppings such as sliced tomatoes, onion, and a few fresh mint leaves.
