
Moussaka
A hearty and satisfying take on the classic Greek casserole, layered with spiced beef, tender aubergine, and a golden yogurt topping. Quick enough for a weeknight dinner yet impressive enough for guests.

Instructions
- Heat the grill to high. Brown 500g of beef in a deep ovenproof frying pan over a high heat for 5 minutes. Meanwhile, prick the aubergine all over with a fork, then microwave on high for 3–5 minutes until completely soft. In a small bowl, mix together 150g of Greek yogurt, 1 beaten egg and 3 tablespoons of grated Parmesan, then season to taste.
- Stir 400g of chopped tomatoes, 4 tablespoons of tomato purée and 350g of potatoes into the beef, season well and heat through. Smooth the surface of the beef mixture with the back of a spoon, then slice the cooked aubergine and arrange it evenly on top. Pour the yogurt mixture over the aubergine layer, spread it out smoothly, then place the pan under the grill until the topping has set and turned golden.
