
Mustard Champ
A creamy Irish-style mashed potato dish with wholegrain mustard and buttery spring onions. Perfect alongside gammon or as a topping for fish pie.

Milk⚖ 206 g 💧 200 ml 🥛 0.845 cup

Instructions
- Boil 1 kg of potatoes for about 15 minutes, or until tender. Drain well, then mash until smooth.
- Heat 200 ml of milk and 25 g of butter in the same pan until warm, then beat the mixture into the mash along with 2 tablespoons of wholegrain mustard until creamy and well combined.
- Melt the remaining 25 g of butter in a small pan over a gentle heat and fry the spring onions for about 2 minutes until just soft but still a vibrant green. Fold the spring onions into the mash and serve immediately.
