
Kenyan Beef Curry
A rich and aromatic East African beef curry slow-simmered with tomatoes, onions, and warming spices until the meat is fall-apart tender. Perfect served over rice or with flatbread for a deeply satisfying meal.

Instructions
- Bring 950 ml of water to a boil in a Dutch oven or large soup pot. Add the beef, garlic, and ginger, stir well, then reduce to a gentle simmer. Cover and cook, stirring occasionally, for 20 minutes, skimming off any foam that rises to the surface. Remove from the heat and drain the beef, reserving the cooking liquid for later.
- Return the pot to medium heat and add 30 ml of cooking oil. Once the oil is shimmering, add the sliced red onions and cook, stirring occasionally, until softened, about 5β7 minutes. Add the chopped tomatoes and continue cooking, stirring occasionally, until they break down and become saucy, about 3β5 minutes.
- Add the drained beef to the tomato and onion mixture, stir well, and cook over medium heat for 5 minutes. Stir in the paprika, black pepper, curry powder, tomato purΓ©e, and salt to taste, mixing everything together thoroughly.
- Pour in the reserved cooking liquid plus enough additional water to just cover the beef. Bring to a boil, then reduce the heat and simmer uncovered, stirring occasionally, for about 1 hour, or until the meat is tender and the sauce has thickened. Add more water if the curry begins to dry out or if you prefer a soupier consistency.
- Once the curry is ready, remove from the heat and adjust the seasoning to taste. Garnish with fresh sliced chilli and cilantro leaves before serving.
