
Pomegranate Salad
A vibrant, fresh salad combining crisp baby lettuce, juicy cherry tomatoes and jewel-like pomegranate seeds, finished with creamy feta and a honey-lemon dressing.

Instructions
- Combine 60 ml olive oil, 30 ml lemon juice, 1 tablespoon honey and the leaves from 2 thyme sprigs in a large bowl. Season well with salt and pepper, then add 100 g baby lettuce leaves, 250 g cherry tomatoes, 3 chopped spring onions and 1 chopped red chilli and toss until everything is evenly coated in the dressing.
- Halve the pomegranate and scoop out the seeds over a separate bowl, removing any white membrane. Arrange the dressed salad on a serving platter, then scatter over the pomegranate seeds and crumble 50 g feta on top.
