
Grilled Portuguese Sardines
Smoky, caramelised sardines marinated with garlic, paprika, rosemary and chilli — a classic Portuguese street-food experience straight from the grill.

Instructions
- Combine 30 ml olive oil, minced garlic, 15 g paprika, juice of half a lemon, rosemary sprigs and finely chopped red chilli in a bowl and season well with salt and pepper. Pour the marinade into a baking dish, add the sardines and toss to coat thoroughly. Cover and refrigerate for a few hours.
- Heat a barbecue or griddle pan until very hot. Cook the sardines for 4–5 minutes on each side until deeply caramelised and lightly charred. Transfer to a serving plate, drizzle with a little extra olive oil, dust with a pinch more paprika and squeeze fresh lemon wedges over the top before serving.
