
Air Fryer Patatas Bravas
Crispy golden potatoes cooked in an air fryer, topped with a rich, smoky tomato sauce. A lighter take on the beloved Spanish tapas classic, perfect for sharing.

Instructions
- Soak the potatoes in just-boiled water for 30 minutes, then drain and leave to air-dry for 5 minutes. Heat the air fryer to 200°C. Tip the potatoes into a bowl, drizzle over 1 tablespoon of olive oil, and season with 2.5g each of salt and freshly ground black pepper. Toss to coat evenly, then transfer to the air fryer basket and cook for 20–30 minutes until crisp and golden.
- Meanwhile, heat the remaining 2 tablespoons of olive oil in a small pan over a medium-low heat and fry the chopped onion for 8–10 minutes until softened but not coloured. Stir in the crushed garlic and cook for 1 minute, then add the paprika and cook for a further 30 seconds. Stir in the tomato purée and cook for 1 minute, then add the 225g of tinned tomatoes. Simmer over a medium heat for 5–10 minutes until the sauce has thickened slightly.
- Once the potatoes are cooked, tip them onto a serving platter and spoon the tomato sauce generously over the top. Scatter with fresh basil leaves and serve immediately.
