
Fried Calamari
Crispy golden squid rings coated in seasoned flour with capers, served with a simple garlic mayonnaise and fresh lemon wedges. A classic appetiser that comes together in minutes.

Instructions
- Cut the squid into rings about 0.5 cm thick. Tip 200 g of plain flour into a freezer bag, season well with salt and pepper, then add 2 tablespoons of capers and shake to combine. Add the squid rings to the bag and shake until all the rings are evenly coated. Mix the crushed garlic clove into 5 tablespoons of mayonnaise and transfer to a small serving bowl.
- Pour vegetable oil into a large, deep pan until it reaches about 7 cm up the sides, ensuring the pan is no more than one-third full. Heat over a medium flame. To test the temperature, drop a small piece of bread into the oil β it should sizzle immediately on contact.
- Working in batches, remove a handful of squid from the bag and shake off any excess flour. Carefully lower the rings into the hot oil and fry for about 3 minutes until crisp and golden. Remove with a slotted spoon and drain on kitchen paper. Repeat with the remaining squid. Serve immediately with the garlic mayonnaise and lemon wedges.
