
Garlicky Prawns with Sherry
A quick and flavourful Spanish-inspired dish of juicy prawns sautéed in olive oil with garlic and a splash of dry sherry. Ready in minutes, it makes a perfect tapas-style starter or light main course.

Instructions
- Heat 45ml of olive oil in a large frying pan over medium heat. Add the chopped garlic and cook for a few seconds until fragrant, then stir in 400g of prawns and cook for a couple of minutes until they begin to turn pink.
- Pour in 30ml of dry sherry and continue cooking for a few minutes more, just until the prawns are cooked through. Sprinkle generously with fresh parsley and serve immediately.
