
Spaghetti with Spanish Flavours
A vibrant and quick pasta dish inspired by Spanish ingredients, combining smoky chorizo, sweet red peppers, and Parmesan for a satisfying weeknight meal.

Spaghetti⚖ 300 g 💧 461.5 ml 🥛 2 cup

Instructions
- Put a large pan of water on over a high heat and bring to the boil. Meanwhile, snip 80g of chorizo into strips with scissors, and roughly chop 20g of parsley and 2 red peppers, removing any stray seeds first.
- When the water is boiling briskly, add 300g of spaghetti with a generous amount of salt, stir well and return to the boil. Cook for about 3 minutes until just al dente.
- In a large frying pan, heat 30ml of olive oil over a medium-high heat. Add the chorizo and peppers with plenty of freshly ground black pepper. Cook for a minute or so, until heated through and the oil is stained a deep red from the paprika in the chorizo. Before draining the pasta, scoop out roughly 125ml of pasta cooking water, then drain the spaghetti and tip it straight into the frying pan.
- Add the parsley and 50g of grated Parmesan, toss everything together well, and splash in the reserved pasta water to loosen and moisten the dish. Serve immediately, with extra Parmesan passed around at the table.
