
Stir-Fried Chicken with Chillies & Basil
A bold and aromatic Thai-inspired stir-fry combining tender chicken with fiery red chillies, fragrant basil, and a savoury fish sauce glaze. Quick to make and packed with flavour, it's perfect served over steamed rice.

Instructions
- Heat a wok or large frying pan over very high heat, then add 15 ml of the oil. Once the oil is smoking hot, add the chicken and stir-fry over high heat for 8–10 minutes until browned all over. Remove the chicken with a slotted spoon and set aside.
- Reheat the wok and add the remaining 15 ml of oil. Add the garlic and shallots and stir-fry for about 3 minutes until golden brown.
- Return the chicken to the wok and add the red chillies, 30 ml fish sauce, 10 ml dark soy sauce, and 10 g sugar. Stir-fry over high heat for a further 8–10 minutes, or until the chicken is cooked through. Stir in the basil leaves and serve immediately.
