Instructions
- Heat the oven to 200°C (180°C fan / gas 6) and line a baking tray with foil. In a large bowl, mix the sweet chilli sauce with the orange zest and 30 ml of orange juice, crushed garlic, Thai red curry paste, and 1.5 g salt. Add the chicken drumsticks and coat thoroughly in the marinade.
- Arrange the drumsticks on the prepared tray, spaced apart. Spoon any remaining marinade from the bowl over the chicken. Roast for 35–40 minutes until cooked through, tender, and slightly caramelised. Serve immediately, or wrap in foil and store in a food container for later.
