Instructions
- Place the mascarpone, Greek yogurt, icing sugar and orange blossom water into a large bowl and whisk together until the mixture has thickened to a soft, creamy consistency.
- Crumble in the meringue nests, then fold through the chopped apricots, diced Turkish delight (about 2 pieces), almonds (25g) and most of the mint leaves. Divide the mixture evenly between 2 dessert glasses or bowls and finish with a few extra mint leaves to garnish.
