
Chicken Wings with Cumin, Lemon & Garlic
Tender, crispy chicken wings marinated in a fragrant blend of cumin, garlic, lemon and olive oil, then finished with a drizzle of honey. Perfect for sharing at a barbecue or as a crowd-pleasing oven-baked snack.

Instructions
- Using sharp kitchen scissors, cut each wing at the knuckle into two pieces. Mix the garlic, lemon zest and juice, 5 g cumin seeds, 30 ml olive oil and plenty of seasoning together, then tip the mixture into a dish with the chicken wings and toss well to coat. Cover and refrigerate to marinate for at least 1 hour, or overnight if time allows.
- Heat the oven to 200Β°C (180Β°C fan / gas 6), or prepare an outdoor barbecue. To bake, spread the wings on an oven tray and cook for 45β50 minutes until golden and crisp, drizzling over 15 ml of honey during the final 10 minutes. To barbecue, cook the wings for 20 minutes, again drizzling with honey for the last 10 minutes.
- Serve on a large platter with plenty of paper napkins, alongside small bowls of olives, nuts, dates, pickled chillies and flatbreads.
