Instructions
- Combine the crushed garlic, ginger, lemon juice, olive oil, chilli powder, cumin, and seasoning in a bowl. Blitz with a hand blender until smooth, then coat the lamb chops thoroughly on both sides. Cover and leave to marinate in the fridge for at least 2 hours, or overnight for deeper flavour.
- Heat a barbecue until hot. Grill the chops over the coals for 3 minutes on each side until cooked through but still pink and juicy in the centre. Rest briefly before serving.
