
Griddled Aubergines with Sesame Dressing

Instructions
- Slice the aubergines and brush each slice with olive oil, then season with salt and pepper. Heat a griddle pan or barbecue until hot, then griddle the aubergine slices for 2β3 minutes on each side until golden brown and tender.
- While the aubergines cook, mix 250g Greek yogurt with 3 tablespoons tahini paste, 1 crushed garlic clove, the juice of 1 lemon, and a handful each of roughly chopped coriander, parsley, and mint. Season to taste.
- Arrange the griddled aubergine slices on a serving plate, spoon over the dressing, and scatter with a few extra fresh herb leaves to finish.
