Instructions
- Drain the chickpeas into a sieve set over a bowl or jug to catch the liquid. Tip the chickpeas, tahini, 1 large garlic clove, and 3 tablespoons of Greek yogurt into a food processor or blender and blitz until smooth.
- With the motor running, add 1 tablespoon of the reserved chickpea liquid at a time, blending between each addition, until you reach a creamy, spreadable consistency. Scrape the hummus into a serving bowl.
- Stir in the juice of half a lemon, then season with salt and pepper to taste. Adjust the lemon or seasoning as needed before serving.
