
Kofta Burgers

Instructions
- Tip 1 kg lamb mince into a large bowl along with 2 finely chopped onions, the cloves from 1 garlic bulb (minced), 6 tablespoons of garam masala, a bunch of roughly chopped coriander, 1 tablespoon of chilli sauce and a generous pinch of salt. Roll up your sleeves and use your hands to squelch everything together until completely combined. Shape the mixture into 16 small patties. The burgers can be frozen for up to 1 month or refrigerated for up to 1 day ahead.
- When ready to cook, heat the grill to its highest setting. Arrange the burgers in a single layer on a baking tray — work in batches if needed. Grill on the highest shelf for 5–6 minutes per side until well browned and cooked through.
- Pile the cooked burgers onto a platter and serve alongside 8 pitta breads, 4 sliced tomatoes, ½ shredded red cabbage, 1 sliced red onion and a pot of yogurt, so everyone can build their own sandwich.
