
Smoked Aubergine Purée
A smoky, creamy aubergine purée with bright lemon, garlic, and fresh dill. Perfect as a dip or a light side dish, best served warm.

Instructions
- Heat the grill to its highest setting. Slice the aubergines in half lengthways, then grill for 25 minutes, turning occasionally, until the flesh is completely soft — the skin will remain firm but the interior will yield easily. Remove from the grill and leave to cool until comfortable to handle.
- Using a sharp knife, score the grilled flesh, then scoop it out with a spoon into a bowl. Mash with a fork until you have a thick, even pulp. Beat in the juice of 1 lemon and 3 crushed garlic cloves. Fold in 150 ml of yogurt and a generous handful of chopped fresh dill, then season to taste with salt and pepper. Serve while still warm.
