Instructions
- Drop the rice noodles into a large bowl and pour over enough boiling water to cover. Add the sliced sugar snap peas and leave to soak for 4 minutes. Drain in a colander, rinse under cold running water to cool, then drain again. Tip into a bowl and toss with 2 tsp sesame oil.
- Whisk together all the dressing ingredients: 3 tbsp soy sauce, 1 tbsp clear honey, 1 tbsp lemon juice, 1 tbsp groundnut oil, 1 finely chopped garlic clove, and a thumb-sized knob of ginger, peeled and grated.
- Pile the spring onions, a handful of coriander, and 150 g hot smoked flaked salmon over the noodles. Pour the dressing over everything and toss gently to combine. Serve alongside pretzels or a bread roll.
