
Salmon Noodle Soup
A fragrant and warming noodle soup with tender salmon, shiitake mushrooms and rice noodles in a spiced Thai red curry broth. Ready in under 30 minutes, it's a vibrant weeknight meal finished with a squeeze of fresh lime.

Instructions
- Pour 1 L of chicken stock into a large pan and bring to the boil. Stir in 2 tsp of Thai red curry paste, then add 100 g of rice noodles and cook for 8 minutes. Add 150 g of shiitake mushrooms and 125 g of sweetcorn and cook for a further 2 minutes.
- Add 2 salmon fillets to the pan and cook for 3 minutes, or until cooked through. Remove from the heat and stir in the juice of 2 limes, 1 tablespoon of soy sauce and a pinch of brown sugar. Ladle into bowls and scatter over a generous bunch of fresh coriander just before serving.
