Instructions
- Thinly slice the carrots, red cabbage, and red onions and tip them all into a large mixing bowl.
- Prepare the dressing by combining the juice of 2 limes, 15 ml groundnut oil, 1 chopped red chilli, and 1 tablespoon of brown sugar in a small bowl, stirring until the sugar has fully dissolved.
- Pour the dressing over the vegetables and toss well to coat everything evenly. Add a handful each of fresh mint and coriander leaves, then toss again.
- Scatter a handful of roasted peanuts over the top and serve immediately.
