
Tofu, Greens & Cashew Stir-Fry
A vibrant and satisfying stir-fry packed with tender broccoli, pak choi, soya beans and marinated tofu, all tossed in a savoury hoisin and soy sauce with crunchy cashew nuts. Ready in minutes, it makes a perfect light yet nourishing meal.

Instructions
- Heat 1 tablespoon of vegetable oil in a non-stick wok over high heat. Add the broccoli and fry for 5 minutes until just tender, adding a splash of water if it begins to catch on the pan.
- Add the sliced garlic and chilli and fry for 1 minute, then toss in the spring onions, 140g soya beans, pak choi and 300g marinated tofu. Stir-fry for 2β3 minutes until everything is heated through and the greens are wilted.
- Add 1Β½ tablespoons of hoisin sauce, 1 tablespoon of soy sauce and 25g cashew nuts, tossing everything together to warm the nuts and coat the vegetables in the sauce. Serve immediately.
