
Cevapi Sausages
Juicy Balkan-style grilled sausages made from a seasoned mix of beef and pork, shaped into small finger rolls and cooked until beautifully charred. Perfect served with flatbread, ajvar, and fresh onion.

Instructions
- Place the minced beef and pork in a large bowl. Finely chop the onion and grate the garlic cloves, then add both to the bowl. Add the chopped parsley, paprika, baking powder, dried breadcrumbs, 45 ml of water, crumbled vegetable stock cube, salt, and pepper.
- Mix thoroughly using a hand mixer fitted with dough hooks until the mixture is well combined and slightly sticky. Cover the bowl with cling film and leave to rest in the refrigerator for 1–2 hours.
- Take portions of the meat mixture of about 50–55 g each and shape them into rolls roughly as thick as your thumb and 7–10 cm long. You should get approximately 18 sausages.
- Grill the cevapi on a hot grill pan or barbecue for about 12–14 minutes, turning them several times, until browned and cooked through. To check doneness, cut one sausage in half — it should show no pink in the centre.
- Serve hot. Leftovers can be reheated in an oven preheated to 180°C for about 10 minutes, or until heated through.
