
Croatian Bean Stew
A hearty and rustic Croatian stew combining creamy cannellini beans with chorizo and tender vegetables. This dish deepens in flavour overnight, making leftovers even more satisfying.

Instructions
- Heat 45 ml of vegetable oil in a large frying pan over medium heat. Add 5 finely chopped shallots and 2 cloves of garlic and sautΓ© until softened and translucent, then add 500 ml of chopped tomatoes and continue cooking until the vegetables are tender.
- Transfer the sautΓ©ed vegetables to a large pot. Add 2 drained cans of cannellini beans and 500 g of chopped chorizo, stir everything together and cook on low heat for 20 minutes. Alternatively, transfer the mixture to an oven-safe dish and bake at 180 Β°C for 30 minutes.
- Finish with a pinch of fresh parsley before serving. The stew tastes even better reheated the following day once the flavours have had time to meld.
