
Caribbean Tamarind Balls
A beloved Caribbean sweet treat made with just two ingredients β tangy tamarind and sugar. These bite-sized balls are rolled in crystallised sugar for a perfectly chewy, sweet-and-sour snack.

Instructions
- Add 450 g of tamarind pulp and 200 g (1 cup) of granulated sugar to a bowl and mash together thoroughly with a spoon or fork until well combined.
- Take small portions of the mixture and roll them between your palms to form smooth balls roughly marble-sized, or slightly larger if preferred.
- Spread the remaining 65 g (β cup) of granulated sugar on a flat plate or sheet pan. Roll each tamarind ball in the sugar until evenly and generously coated.
- Serve immediately, or leave the balls to set for a few hours or overnight. Resting allows the texture to firm up and the sugar coating to crystallise beautifully.
