Instructions
- Mash 3 medium bananas thoroughly with a fork in a large bowl until smooth. Add 3 tablespoons of brown sugar, 1 teaspoon of vanilla extract, 1/2 teaspoon of cinnamon, 1/4 teaspoon of nutmeg, and a pinch of salt, then stir to combine. Sift in 120 g (1 cup) of all-purpose flour and mix with a spoon until a thick, uniform batter forms.
- Pour enough oil into a 25 cm skillet to cover the base generously and heat over medium-high heat. Once the oil is hot, drop spoonfuls of batter into the pan, leaving space between each fritter. Fry until the underside is golden and bubbles appear on the surface, then flip and cook until the second side is evenly browned.
- Remove the fritters from the oil and drain on paper towels before serving.
