
Jamaican Steamed Cabbage
A vibrant and flavourful Jamaican side dish of tender cabbage cooked with carrots, tomatoes, scotch bonnet and fresh herbs. Quick and simple to prepare, it makes a perfect accompaniment to any Caribbean meal.

Instructions
- Add all the ingredients — cabbage, sliced carrots, chopped plum tomato, chopped onion, chopped garlic, spring onions, thyme sprigs, half a scotch bonnet, 30 ml water, 30 ml olive oil, 60 g unsalted butter, 10 g kosher salt and 2 g black pepper — to a large pan over medium heat and cover with a lid.
- Cook on medium heat for 10 minutes, stirring occasionally to ensure even cooking.
- Reduce the heat to low and continue to cook for a further 5 minutes, until the cabbage is soft and tender. Remove the pan from the heat, discard the thyme stalks, and serve immediately.
