
Jamaican Sweet Potato Pudding

Instructions
- Preheat the oven to 175Β°C (350Β°F). Grease and line a 23 cm (9-inch) round or loaf pan with parchment paper.
- Peel and cut the sweet potatoes, then process them in a food processor until finely grated. In a small bowl, toss the raisins with 10 ml (2 teaspoons) of flour taken from the total 60 g (Β½ cup). Set aside.
- In a large bowl, combine the grated sweet potatoes, 300 g (1Β½ cups) brown sugar, the remaining flour, 15 ml (1 tablespoon) vanilla extract, 5 ml (1 teaspoon) allspice, 5 ml (1 teaspoon) ground cinnamon, 5 ml (1 teaspoon) ground nutmeg, 2.5 ml (Β½ teaspoon) ground ginger, and 1.25 ml (ΒΌ teaspoon) salt. Stir in 360 ml (1Β½ cups) of coconut milk until a smooth batter forms, then fold in the flour-coated raisins.
- Pour the batter into the prepared pan and smooth the top. Bake uncovered for 1 hour 30 minutes, until the pudding is mostly set but still slightly soft in the centre. In a small saucepan, warm the remaining 180 ml (ΒΎ cup) coconut milk with 15 ml (1 tablespoon) brown sugar, 0.5 ml (β teaspoon) cinnamon, and 0.5 ml (β teaspoon) nutmeg over low heat, stirring until the sugar dissolves, and pour over the pudding during or after baking as desired. Allow to cool completely before slicing and serving.
