
Chivito Sandwich
A legendary Uruguayan sandwich piled high with sirloin steak, fried egg, bacon, ham, melted mozzarella, and fresh vegetables, all served on homemade brioche buns. Rich, hearty, and deeply satisfying, it is the ultimate crowd-pleasing meal.

Instructions
- For the brioche buns, heat 80 g milk with 60 g butter and 1 tablespoon of molasses until the butter has fully melted. Remove from the heat and stir in 220 g cold water and 1 egg until combined.
- In a large bowl, combine 500 g bread flour, 10 g salt, and 10 g yeast. Pour in the milk mixture and stir with a wooden spoon until a rough dough forms β no vigorous kneading is required at this stage. Cover the bowl with a damp towel and refrigerate overnight.
- The next morning, turn the dough out onto a generously floured surface and knead briefly until smooth. Divide into 8 equal pieces and shape each into a ball. Arrange on a baking sheet lined with parchment paper, cover again with a damp towel, and leave to rise for about 1 hour, or until doubled in size.
- Preheat the oven to 220 Β°C. Brush the buns with egg wash and sprinkle with sesame seeds. Bake for 15β20 minutes until deep golden brown. Transfer to a wire rack and allow to cool completely.
- Finely chop 4 onions and sautΓ© them in a knob of butter over medium-low heat, stirring occasionally, until deeply caramelised β this will take 10β15 minutes. Set aside.
- Rub 8 sirloin steaks with a little garlic. Working in batches as needed, grill or pan-fry the steaks to your preferred doneness, fry 8 rashers of bacon until crisp, and fry 8 eggs, seasoning everything with salt and pepper. Slice the brioche buns in half and toast the cut sides.
- To assemble, spread mustard on the bottom half of each bun. Layer with a sirloin steak, 1 slice of ham, 1 slice of mozzarella, 1 rasher of bacon, a slice of tomato, and a little lettuce. Place a fried egg on top, then spoon over chimichurri sauce generously and finish with a helping of the caramelised onions. Close with the top bun and serve immediately.
