
Christmas Pudding Trifle

Instructions
- Peel the oranges using a sharp knife, ensuring all the pith is removed. Slice as thinly as possible and arrange over a large plate. Sprinkle with 1 tablespoon of demerara sugar, followed by 2 tablespoons of Grand Marnier, and set aside to macerate.
- Crumble 300g of Christmas pudding into large pieces and scatter evenly over the bottom of a trifle bowl. Lift the orange slices onto the pudding to form an even layer, then pour over any accumulated juices.
- Beat 250g of mascarpone until smooth, then stir in 500g of custard until well combined. Spoon the mixture evenly over the orange layer.
- Lightly whip 284ml of double cream until it just holds soft peaks and spoon it over the custard layer. Sprinkle with a handful of flaked almonds and a generous amount of grated dark chocolate. Refrigerate until ready to serve β this trifle can be prepared up to one day in advance.
