Instructions
- Pour 750 ml rosé into a 13×9" pan and freeze until almost solid — it won't completely solidify due to the alcohol. This will take at least 6 hours, or up to 1 week ahead.
- Meanwhile, bring 100 g sugar and 120 ml water to a boil in a medium saucepan, stirring constantly until the sugar dissolves, about 3 minutes. Add 225 g strawberries, remove from heat, and let sit for 30 minutes to infuse the syrup with strawberry flavour. Strain through a fine-mesh sieve into a small bowl without pressing on the solids, then cover and chill until cold, about 30 minutes.
- Scrape the frozen rosé into a blender. Add 60–90 ml lemon juice, 100 ml of the strawberry syrup, and 240 ml crushed ice, then purée until smooth. Transfer the blender jar to the freezer and freeze until the frosé thickens to a milkshake consistency, 25–35 minutes.
- Blend again until slushy, then divide among glasses and serve immediately.
