
Castilian Hot Chocolate

Instructions
- Sift 120 g of cocoa powder and 200 g of sugar together into a medium-sized saucepan. Dissolve 35 g of cornstarch in 120 ml of cold water, then stir the mixture into the cocoa and sugar until a smooth paste forms.
- Begin heating the paste over medium heat, stirring constantly with a whisk, and gradually pour in 950 ml of milk. Continue whisking as you bring the liquid to a gentle simmer.
- Allow the chocolate to simmer for about 10 minutes, stirring frequently, until it is thick, glossy and completely smooth. Serve steaming hot in coffee mugs. Makes 6 servings.
