
Mexican Hot Chocolate
A rich and frothy traditional Mexican hot chocolate made with real chocolate, cinnamon, and whipped eggs. Perfect for warming up on a cold day.

Instructions
- Pour 1.4 litres of milk into the top of a deep double boiler and bring to the boil over simmering water, keeping it there for 5 minutes. Remove from the heat and add 85 g of Mexican chocolate broken into pieces along with 1 tsp of powdered cinnamon, incorporating them a little at a time and beating vigorously with a molinillo or egg beater after each addition until the chocolate is completely blended into the milk.
- Return the mixture to the heat and bring it back to just below the boiling point. Place the top of the double boiler back over the bottom and add 3 eggs, whipping constantly until the eggs are thoroughly blended and the drink is light and frothing. Serve immediately in coffee mugs. Makes 8 servings.
