Instructions
- Combine 480 ml of milk, 115 g of chopped bittersweet or semi-sweet chocolate, 3 strips of orange peel (each about 5 cm long), 2.5 ml of instant espresso powder, and 0.5 g of ground nutmeg in a heavy medium saucepan. Stir over low heat until the chocolate has fully melted.
- Increase the heat and bring the mixture just to a boil, stirring often. Remove from heat and whisk vigorously until frothy. Return to the heat and bring to a boil once more, then remove and whisk until frothy again. Repeat this heating and whisking process one final time.
- Discard the orange peel strips. The hot chocolate can be prepared up to 2 hours ahead and left at room temperature — simply bring it back just to a boil and whisk until frothy before serving. Pour into two coffee mugs and serve immediately.
