
Cranberry Cordial
A homemade cranberry liqueur with a beautiful deep colour and rich, sweet flavour. Simply combine the ingredients and let time do the work over six weeks of patient infusion.

Instructions
- Place 500 g of chopped cranberries in a 2-litre jar with a tight-fitting lid. Add 750 ml of sugar and 500 ml of light rum. Secure the lid tightly and store the jar in a cool, dark place.
- Every day for six weeks, invert the jar and shake it to help the sugar dissolve and the flavours meld.
- After six weeks, strain the cordial through a fine sieve or cheesecloth into clean bottles and seal with corks.
