
Spotted Dick
A classic British steamed suet pudding studded with plump currants and fragrant citrus zest. Best served warm in thick slices with a generous pour of custard.

Instructions
- Put the flour and salt in a large bowl. Add the suet, currants, caster sugar, and the lemon and orange zest, then stir to combine.
- Pour in 150 ml of milk and mix to form a firm but moist dough, adding a little extra milk if needed to bring it together.
- Shape the dough into a fat roll about 20 cm long. Place it on a large rectangle of baking parchment and wrap loosely to allow room for the pudding to rise, then tie the ends with string to form a Christmas-cracker shape.
- Set a steamer basket over a large pan of boiling water, place the wrapped pudding inside, cover, and steam for 1Β½ hours, topping up the pan with boiling water as needed.
- Remove the pudding from the steamer and allow it to cool slightly before unwrapping. Slice and serve warm with custard.
