
Steak and Kidney Pie
A classic British comfort dish of tender beef and lamb kidneys in a rich, savoury gravy, topped with a golden, flaky puff pastry crust. Perfect for a hearty dinner served alongside creamy mashed potatoes and steamed vegetables.

Instructions
- Preheat the oven to 220Β°C / 425Β°F / Gas 7.
- Heat 2 tablespoons of vegetable oil in a large frying pan over high heat and brown the beef all over, working in batches if necessary. Set the beef aside, then brown the kidneys on both sides in the same pan. Add the chopped onions and cook for 3β4 minutes until softened.
- Return the beef to the pan, sprinkle over 30g of plain flour and stir well to coat the meat and onions evenly.
- Pour in 85ml of beef stock, stir thoroughly and bring to the boil. Reduce the heat and simmer uncovered for 1Β½ hours, adding a little more stock if the liquid evaporates too much.
- Remove from the heat. Season with a pinch of salt, a pinch of pepper and a dash of Worcestershire sauce, then allow the filling to cool completely. Transfer the cooled meat mixture into a pie dish.
- Roll out 300g of puff pastry to approximately 5mm thick, making it about 5cm larger than your pie dish on all sides. Using a rolling pin, carefully lift the pastry and drape it over the top of the pie dish. Trim any excess and crimp the edges firmly with your fingers and thumb to seal.
- Brush the pastry surface with the beaten egg yolk and bake for 30β40 minutes until the pastry is deep golden-brown and puffed. Serve immediately with creamy mashed potatoes and steamed vegetables to soak up the gravy.
