
Jam Jam Cookies
Soft, spiced molasses cookies sandwiched together with your favourite jam β a classic treat perfect for sharing with a cup of tea.

Instructions
- Preheat the oven to 180 Β°C and line a large baking sheet with parchment paper. In a small bowl, dissolve the baking soda in 45 ml of water and set aside.
- In a stand mixer fitted with the paddle attachment, cream 225 g of butter, 200 g of white sugar and 1 egg until well combined. Add 120 ml of molasses and 1 tsp of vanilla extract and mix until smooth. Pour in the baking soda and water mixture and mix for another minute.
- In a separate bowl, whisk together 500 g of flour, 2 tsp of baking powder, 1 tsp of cinnamon and 2 tsp of salt. Add the dry ingredients to the wet ingredients a little at a time, mixing on low speed and scraping down the sides of the bowl until fully incorporated. The dough should be firm enough to shape easily.
- Portion the dough with a small spoon and roll into balls. Place them on the prepared baking sheet and press each ball into a flat disc using a lightly floured glass or a moistened palm.
- Bake for 10β12 minutes, then remove from the oven and allow the cookies to cool on the sheet for at least 10 minutes.
- Once fully cooled, assemble the sandwiches by spreading at least 10 ml of your favourite jam onto the flat side of one cookie, then pressing a second cookie on top. Repeat with the remaining cookies and serve with a cup of tea.
